Ingredients

- 1 grilled chicken breast, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 ball fresh mozzarella, torn into chunks
- 1/2 cucumber, sliced
- 1/2 cup baby arugula or spinach
- 1 tbsp olive oil
- 1 tsp balsamic glaze (optional for topping)
- Salt & pepper to taste
Instructions
- Season the chicken breast with olive oil, salt, and pepper. Grill it until golden and juicy, then slice it up.
- Layer your bowl with fresh arugula or spinach.
- Cut the cucumbers into rounds and halve the tomatoes.
- Tear the mozzarella into chunks and place them over the tomatoes.
- Place the grilled chicken slices over the greens, add in the veggies, drizzle with olive oil or balsamic glaze, and season to taste.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Keep some components separate for freshness.
