Grilled Chicken with Broccoli & Sweet Potato Mash

Description

A healthy and delicious meal combining protein, vegetables, and nutritious carbs, great for weeknight dinners or meal prep.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 2 medium sweet potatoes, peeled & cubed
  • 2 tbsp olive oil, divided
  • Salt & black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

Instructions

  1. Season the chicken breasts with salt, black pepper, garlic powder, and smoked paprika.
  2. Grill the seasoned chicken over medium heat for 6–7 minutes on each side until cooked through.
  3. While the chicken is grilling, prepare the broccoli by lightly steaming or sautéing it in 1 tablespoon of olive oil until tender-crisp.
  4. Boil the sweet potatoes in water until fork-tender, then mash them with the remaining tablespoon of olive oil, adding salt and pepper to taste.
  5. Arrange the grilled chicken, broccoli, and sweet potato mash on a plate and serve immediately for best flavor.

Notes

Serve with fresh herbs for extra flavor. Pairs nicely with a light salad or whole-grain bread. Can be stored in the refrigerator for up to 3 days.
