Ingredients

- 2 boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 2 medium sweet potatoes, peeled & cubed
- 2 tbsp olive oil, divided
- Salt & black pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
Instructions
- Season the chicken breasts with salt, black pepper, garlic powder, and smoked paprika.
- Grill the seasoned chicken over medium heat for 6–7 minutes on each side until cooked through.
- While the chicken is grilling, prepare the broccoli by lightly steaming or sautéing it in 1 tablespoon of olive oil until tender-crisp.
- Boil the sweet potatoes in water until fork-tender, then mash them with the remaining tablespoon of olive oil, adding salt and pepper to taste.
- Arrange the grilled chicken, broccoli, and sweet potato mash on a plate and serve immediately for best flavor.
Notes
Serve with fresh herbs for extra flavor. Pairs nicely with a light salad or whole-grain bread. Can be stored in the refrigerator for up to 3 days.
