Description

A healthy and delicious dish combining juicy grilled chicken, creamy mashed sweet potatoes, and vibrant green broccoli.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 sweet potatoes
  • 1 tablespoon butter
  • 1/4 cup milk
  • 1 cup broccoli florets

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill for about 6-7 minutes on each side or until fully cooked.
  2. While the chicken is grilling, peel and chop the sweet potatoes. Boil them in a pot of salted water until tender, about 15-20 minutes. Drain and mash with butter and milk.
  3. Steam or blanch the broccoli until vibrant green and tender, about 5 minutes.
  4. Once the chicken is cooked, slice it and assemble the bowl with mashed sweet potatoes and broccoli. Serve warm and enjoy!

Notes

For extra flavor, drizzle some olive oil or sprinkle with your favorite herbs.
