- 2 boneless, skinless chicken breasts
- 2 ripe avocados, diced
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Let the chicken rest before slicing.
- In a large bowl, combine mixed greens, cherry tomatoes, red onion, and avocado.
- In a small bowl, whisk together olive oil and lemon juice.
- Slice the grilled chicken and add it to the salad. Drizzle with the dressing, toss gently, and top with feta cheese. Serve immediately.
Notes
Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (75°C). Let the chicken rest for at least 5 minutes before slicing for juiciness.
