Ingredients

- 1 grilled chicken breast, sliced
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved & charred
- 1/3 cup corn kernels (cooked or canned)
- 1/4 cucumber, sliced
- 1/2 cup shredded romaine or butter lettuce
- 2 tbsp guacamole
- 2–3 tbsp creamy cilantro-lime dressing (or avocado ranch)
- 1 tsp olive oil (for grilling tomatoes)
- Salt & black pepper, to taste
- Optional: garlic powder, chili flakes
Instructions
- Season the chicken breast with salt, pepper, and any additional spices you like. Grill or pan-sear it until it is juicy and golden brown.
- Toss the cherry tomatoes in a splash of olive oil and sear them until they are lightly charred.
- Slice the avocado, cucumbers, and cooked chicken. Get all your ingredients ready.
- Lay down a bed of lettuce in your bowl. Load it with tomatoes, corn, cucumber, avocado, and chicken. Add a dollop of guacamole in the middle.
- Drizzle the creamy dressing all over the top and sprinkle with black pepper to taste.
Notes
Serve immediately or chill for later. Keep dressing separate to avoid soggy lettuce.
