Description

A tasty and healthy bowl combining grilled chicken, fresh veggies, and creamy avocado, perfect for lunch or dinner.


Ingredients

  • 1 grilled chicken breast, sliced
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved & charred
  • 1/3 cup corn kernels (cooked or canned)
  • 1/4 cucumber, sliced
  • 1/2 cup shredded romaine or butter lettuce
  • 2 tbsp guacamole
  • 23 tbsp creamy cilantro-lime dressing (or avocado ranch)
  • 1 tsp olive oil (for grilling tomatoes)
  • Salt & black pepper, to taste
  • Optional: garlic powder, chili flakes

Instructions

  1. Season the chicken breast with salt, pepper, and any additional spices you like. Grill or pan-sear it until it is juicy and golden brown.
  2. Toss the cherry tomatoes in a splash of olive oil and sear them until they are lightly charred.
  3. Slice the avocado, cucumbers, and cooked chicken. Get all your ingredients ready.
  4. Lay down a bed of lettuce in your bowl. Load it with tomatoes, corn, cucumber, avocado, and chicken. Add a dollop of guacamole in the middle.
  5. Drizzle the creamy dressing all over the top and sprinkle with black pepper to taste.

Notes

Serve immediately or chill for later. Keep dressing separate to avoid soggy lettuce.
