A delicious and healthy meal combining grilled chicken, tender asparagus, and creamy mashed sweet potatoes.


Ingredients

  • 4 boneless chicken breasts
  • 1 bunch of asparagus
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1/4 cup milk
  • Garlic powder (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with olive oil, salt, pepper, and garlic powder if using.
  3. Grill the chicken for about 6-7 minutes on each side, or until cooked through.
  4. While the chicken is grilling, trim the ends of the asparagus and toss them in olive oil, salt, and pepper. Grill for about 5-7 minutes until tender.
  5. Peel and chop the sweet potatoes, boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter and milk until smooth. Season with salt to taste.
  6. Serve the grilled chicken alongside the asparagus and mashed sweet potatoes.

Notes

Marinating the chicken in your favorite seasoning for a few hours can enhance the flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months.
