- 4 boneless chicken breasts
- 1 bunch of asparagus
- 2 large sweet potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 tablespoons butter
- 1/4 cup milk
- Garlic powder (optional)
Instructions
- Preheat your grill to medium-high heat.
- Season the chicken breasts with olive oil, salt, pepper, and garlic powder if using.
- Grill the chicken for about 6-7 minutes on each side, or until cooked through.
- While the chicken is grilling, trim the ends of the asparagus and toss them in olive oil, salt, and pepper. Grill for about 5-7 minutes until tender.
- Peel and chop the sweet potatoes, boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter and milk until smooth. Season with salt to taste.
- Serve the grilled chicken alongside the asparagus and mashed sweet potatoes.
Notes
Marinating the chicken in your favorite seasoning for a few hours can enhance the flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 2-3 months.
