  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried Italian herbs
  • Salt and black pepper, to taste
  • 2 ripe tomatoes, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1 tbsp olive oil (for bruschetta topping)
  • 1 tsp balsamic vinegar (optional)
  • Salt and pepper (for bruschetta topping, to taste)

Instructions

  1. Rub chicken breasts with olive oil, garlic powder, Italian herbs, salt, and pepper.
  2. Grill the chicken over medium-high heat for 6–8 minutes on each side or until fully cooked and juicy. Let it rest for 5 minutes after grilling.
  3. In a bowl, mix together diced tomatoes, red onion, basil, olive oil, and balsamic vinegar (if using). Season with salt and pepper to taste.
  4. Spoon the bruschetta mixture over the grilled chicken. Serve warm and enjoy fresh!

Notes

Let the chicken rest after grilling for juiciness. You can marinate the chicken beforehand for added flavor.
