Description

A refreshing dessert featuring a creamy cheesecake filling topped with a vibrant green grape gel. Perfect for summer gatherings.


Ingredients

  • 200g (about 2 cups) of graham cracker crumbs
  • 100g (about 1/2 cup) of unsalted butter, melted
  • 2 tablespoons of granulated sugar (optional)
  • 500g (about 2 cups) of cream cheese, softened
  • 200ml (about 3/4 cup) of heavy cream
  • 150g (about 3/4 cup) of granulated sugar
  • 2 large eggs
  • 2 tablespoons of cornstarch
  • 1 teaspoon of vanilla extract
  • Zest of one lemon (optional)
  • 200g (about 1 cup) of fresh green grapes, halved
  • 50ml (about 1/4 cup) of lime juice (or grape juice)
  • 100g (about 1/2 cup) of granulated sugar
  • 1 tablespoon of cornstarch
  • A few drops of green food coloring (optional)
  • A few fresh green grape halves or slices for decorating the top
  • Whipped cream (optional)
  • A few mint or cilantro leaves (optional)

Instructions

  1. Prepare the crust: Crush the graham crackers into fine crumbs. Mix the crumbs with melted butter and optional sugar. Press the mixture into the bottom of an 8- or 9-inch springform pan and chill it in the refrigerator.
  2. Make the cheesecake filling: Beat the cream cheese until smooth. Add sugar and cornstarch, then mix in the eggs one at a time. Stir in the heavy cream, vanilla, and optional lemon zest. Pour this mixture into the crust and smooth the top.
  3. Bake: Preheat the oven to 160°C (320°F). Bake the cheesecake for 45-55 minutes until it is set but still slightly wobbly in the center. Turn off the oven and let the cheesecake cool inside with the door cracked open. After cooling, chill it in the refrigerator for at least 4 hours.
  4. Prepare the topping: In a blender, blend the halved grapes and lime juice until smooth. Cook this mixture with sugar and cornstarch until it thickens, then let it cool.
  5. Assemble: Spread the cooled grape gel over the chilled cheesecake. Garnish it with extra grape halves, whipped cream, and mint or cilantro leaves if desired.
  6. Serve and enjoy: Slice the cheesecake and serve, enjoying the creamy filling and refreshing grape topping.

Notes

Make sure cream cheese is at room temperature for easy mixing. Allow cheesecake to cool completely before adding the topping.
