Ingredients

  • 1 1/2 cups grated zucchini
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil or melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated zucchini, eggs, Greek yogurt, honey (or maple syrup), olive oil (or melted coconut oil), and vanilla extract until well combined.
  3. In another bowl, whisk together the dry ingredients.
  4. Gradually add the dry mixture to the wet ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for about 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, drain excess moisture from the grated zucchini. Consider adding nuts, chocolate chips, or dried fruits for extra flavor.
