- 1 1/2 cups grated zucchini
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/3 cup honey or maple syrup
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the grated zucchini, eggs, Greek yogurt, honey (or maple syrup), olive oil (or melted coconut oil), and vanilla extract until well combined.
- In another bowl, whisk together the dry ingredients.
- Gradually add the dry mixture to the wet ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For best results, drain excess moisture from the grated zucchini. Consider adding nuts, chocolate chips, or dried fruits for extra flavor.
