- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/3 cup honey or maple syrup
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the grated zucchini, eggs, Greek yogurt, honey (or maple syrup), olive oil (or coconut oil), and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together dry ingredients (e.g., flour, baking powder, baking soda, salt).
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
