Description
A delicious and moist zucchini bread made with Greek yogurt, perfect for breakfast or as a snack.
Ingredients

- 1 1/2 cups grated zucchini (about 2 medium)
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/3 cup honey or maple syrup
- 1/4 cup olive oil or melted coconut oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- Pinch of salt (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine the grated zucchini, eggs, Greek yogurt, honey (or maple syrup), olive oil (or melted coconut oil), and vanilla extract. Mix well until combined.
- In another bowl, mix together the dry ingredients: flour, baking soda, baking powder, and a pinch of salt if desired.
- Gradually add the dry mixture to the wet mixture, stirring just until combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and enjoy!
Notes
Make sure to squeeze out excess moisture from the grated zucchini and do not overmix the batter for the best texture. Customize with nuts or chocolate chips if desired.
