Delicious and easy-to-make snack or appetizer bursting with fresh flavors from ripe tomatoes and feta cheese.
Ingredients

- 3 medium ripe tomatoes, finely chopped
- 1/2 cup crumbled feta cheese
- 1 small red onion, finely chopped
- 2 tbsp fresh mint, chopped
- 1 cup all-purpose flour
- 1 tsp baking powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl, combine the chopped tomatoes, feta cheese, red onion, and fresh mint.
- In another bowl, mix the flour, baking powder, salt, and pepper.
- Gradually add the dry mixture to the tomato mixture and stir until well combined.
- Heat oil in a frying pan over medium heat.
- Using a spoon, drop small amounts of the mixture into the hot oil, flattening slightly.
- Fry until golden brown on both sides, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
- Serve warm as an appetizer or snack.
Notes
Serve with yogurt or tzatziki sauce for dipping. Pairs well with a fresh salad or pita bread.
