Greek Style Tomato and Feta Fritters

Description

Delicious and easy-to-make snack or appetizer bursting with fresh flavors from ripe tomatoes and feta cheese.


Ingredients

  • 3 medium ripe tomatoes, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1 small red onion, finely chopped
  • 2 tbsp fresh mint, chopped
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, combine the chopped tomatoes, feta cheese, red onion, and fresh mint.
  2. In another bowl, mix the flour, baking powder, salt, and pepper.
  3. Gradually add the dry mixture to the tomato mixture and stir until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Using a spoon, drop small amounts of the mixture into the hot oil, flattening slightly.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels.
  8. Serve warm as an appetizer or snack.

Notes

Serve with yogurt or tzatziki sauce for dipping. Pairs well with a fresh salad or pita bread.
