Ingredients

  • 2 boneless, skinless chicken breasts (or 3 small)
  • 2 tbsp extra virgin olive oil
  • Zest + juice of 1 lemon
  • Zest + juice of 1/2 orange
  • 2 garlic cloves, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the olive oil, lemon zest and juice, orange zest and juice, and minced garlic.
  3. Place the chicken breasts in a baking dish and pour the citrus and herb mixture over them, ensuring they are well coated.
  4. Season with salt and pepper to taste.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Let it rest for a few minutes before slicing and serving.

Notes

For best flavor, marinate the chicken in the citrus mixture for at least 30 minutes before baking. Adjust the amount of garlic based on your preference.
