- 1 lb (450g) boneless skinless chicken breasts or thighs
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt & black pepper, to taste
- Feta cheese, for serving
- Tzatziki sauce, for serving
- Pickled onions, for serving
- Mixed greens or quinoa/rice, for serving
Instructions
- In a bowl, mix together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper.
- Add the chicken to the marinade and let it sit for at least 30 minutes.
- Preheat a grill or skillet on medium heat.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked.
- Let the chicken rest for a few minutes and then slice it.
- Serve the chicken over a bowl of greens, topped with feta cheese, tzatziki sauce, and pickled onions.
Notes
Marinate the chicken overnight for more flavor. You can substitute chicken with shrimp, tofu, or falafel for variations.
