- 1 lb large shrimp, peeled and deveined
- 1 cup orzo pasta
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 pint cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup olives, sliced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the orzo pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- Add the cooked orzo, feta cheese, and olives to the skillet. Toss everything together gently.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes. This dish can be customized with different vegetables or pasta.
