Description

A refreshing and vibrant dish featuring hearty potatoes and Mediterranean flavors, perfect as a side or light lunch.


Ingredients

  • 2 pounds potatoes, diced
  • 1/2 cup red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes. Drain and let cool.
  2. In a large bowl, combine the cooled potatoes, red onion, cherry tomatoes, cucumber, olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve cold or at room temperature. Can be stored in an airtight container in the refrigerator for 3-5 days. Customize with additional ingredients for extra flavor.
