Description

A refreshing and colorful Mediterranean salad filled with vibrant vegetables, feta cheese, and a zesty dressing, perfect for warm days or gatherings.


Ingredients

  • 8 oz pasta
  • 1 can artichoke hearts, drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta according to the package instructions, then drain and let it cool.
  2. In a large bowl, combine the cooked pasta, artichoke hearts, cucumbers, cherry tomatoes, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Make the salad ahead of time to let the flavors meld together overnight. Use whole grain pasta for added nutrition.
