- 1 can artichoke hearts, drained
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp oregano
- Salt, to taste
- Pepper, to taste
Instructions
- Cook the pasta according to the package instructions, then drain and let it cool.
- In a large bowl, combine the cooked pasta, artichoke hearts, cucumbers, cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled or at room temperature.
Notes
Make the salad ahead of time to let the flavors meld together overnight. Use whole grain pasta for added nutrition.
