Ingredients

Scale
  • 1 block (8 oz) feta cheese, cut into cubes
  • 3 large tomatoes, sliced
  • 1 small red onion, sliced into rings
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (optional)

Instructions

  1. Prepare the Ingredients: Start by slicing the tomatoes into thick rounds, cut the feta cheese into cubes, slice the red onion into rings, and chop the fresh parsley.
  2. Assemble the Salad Tower: On a serving plate, stack the feta cubes, tomato slices, and red onion rings in alternating layers until all ingredients are used.
  3. Season & Garnish: Drizzle the olive oil over the salad, sprinkle with oregano, black pepper, and optional red pepper flakes, and top with the chopped parsley.
  4. Add the Olives & Serve: Arrange olives around the base of the salad tower and serve immediately.

Notes

For best flavor, use ripe tomatoes. Experiment with different olive types and consider adding cucumbers or bell peppers for crunch.
