Ingredients

  • 1 block (8 oz) feta cheese, cut into cubes
  • 3 large tomatoes, sliced
  • 1 small red onion, sliced into rings
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (optional)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup green or Kalamata olives

Instructions

  1. Prepare the Ingredients: Slice tomatoes into thick rounds, cut feta cheese into cubes, slice red onion into rings, and chop fresh parsley.
  2. Assemble the Salad Tower: On a serving plate, stack alternating layers of feta, tomato, and onion to create a tower.
  3. Season & Garnish: Drizzle olive oil over the salad, sprinkle with oregano, black pepper, and optional red pepper flakes. Top with chopped parsley.
  4. Add the Olives & Serve: Arrange olives around the base and serve immediately.

Notes

Best served fresh. Store leftovers in an airtight container; will stay fresh for up to two days.
