Description

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt to taste
  • Pepper to taste
  • Tzatziki sauce
  • Cooked rice or quinoa
  • Fresh vegetables (like cucumber, tomatoes, and red onion) for serving

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper. Marinate the chicken in this mixture for at least 30 minutes.
  2. Preheat the grill or skillet over medium heat.
  3. Cook the marinated chicken for 6-7 minutes on each side, or until fully cooked.
  4. Remove from heat and let the chicken rest for a few minutes before slicing.
  5. Serve the sliced chicken on top of cooked rice or quinoa, topped with tzatziki sauce and fresh vegetables.

Notes

For extra flavor, marinate the chicken overnight. You can also make the tzatziki sauce from scratch using a food processor.
