Description

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Tzatziki sauce (store-bought or homemade)
  • Cooked rice or quinoa
  • Sliced cucumber, tomato, and red onion for garnish

Instructions

  1. In a bowl, mix together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper.
  2. Add the chicken breasts or thighs to the marinade, ensuring they’re well-coated. Marinate for at least 30 minutes.
  3. Heat a grill pan or skillet over medium-high heat and cook the chicken for 6-7 minutes on each side, or until cooked through.
  4. Once cooked, let the chicken rest for a few minutes before slicing.
  5. Serve the sliced chicken over cooked rice or quinoa and top with tzatziki sauce.
  6. Garnish with sliced cucumbers, tomatoes, and red onions before serving.
