- 500 g chicken breast, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 1 cup cooked rice or couscous
- 1 cup hummus
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup kalamata olives
- Fresh parsley, for garnish
- Lemon wedges, for serving
Instructions
- In a bowl, combine chicken, olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Mix well and let it marinate for at least 20 minutes.
- Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 8–10 minutes, turning occasionally, until fully cooked.
- To assemble the bowls: Spread hummus at the base, then add rice or couscous. Top with grilled chicken, tomatoes, cucumber, red onion, and olives.
- Garnish with fresh parsley and serve with lemon wedges.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Keep components separated for freshness.
