A delicious and fresh meal combining tender, marinated chicken with flavorful ingredients, perfect for lunch or dinner.


Ingredients

  • 500 g chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 1 cup cooked rice or couscous
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup kalamata olives
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a bowl, combine chicken, olive oil, garlic, lemon juice, oregano, paprika, salt, and pepper. Mix well and let it marinate for at least 20 minutes.
  2. Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 8–10 minutes, turning occasionally, until fully cooked.
  3. To assemble the bowls: Spread hummus at the base, then add rice or couscous. Top with grilled chicken, tomatoes, cucumber, red onion, and olives.
  4. Garnish with fresh parsley and serve with lemon wedges.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Keep components separated for freshness.
