Description

Juicy marinated chicken skewers grilled to perfection, served with a refreshing cucumber yogurt sauce known as tzatziki. Perfect for family dinners or gatherings.


Ingredients

  • 1.5 lbs boneless chicken breast, cubed
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt & pepper, to taste
  • 2 cups chopped cucumber
  • 1 cup diced tomatoes
  • 1 cup shredded romaine
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, finely grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tbsp chopped fresh dill
  • Salt to taste

Instructions

  1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Chill this mixture for 30 minutes.
  2. Grill the chicken skewers until they are charred and cooked through, which takes about 10–12 minutes.
  3. In a bowl, mix the tzatziki ingredients: Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt.
  4. Serve the skewers over a bed of lettuce alongside chopped cucumbers, tomatoes, and a generous dollop of tzatziki.

Notes

For added flavor, marinate chicken for up to 4 hours. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Make tzatziki ahead of time to let flavors meld.
