Description
Juicy marinated chicken skewers grilled to perfection, served with a refreshing cucumber yogurt sauce known as tzatziki. Perfect for family dinners or gatherings.
Ingredients
Scale
- 1.5 lbs boneless chicken breast, cubed
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 tsp garlic, minced
- 1 tsp dried oregano
- 1/2 tsp paprika
- Salt & pepper, to taste
- 2 cups chopped cucumber
- 1 cup diced tomatoes
- 1 cup shredded romaine
- 1 cup plain Greek yogurt
- 1/2 cucumber, finely grated and squeezed dry
- 1 tbsp lemon juice
- 1 clove garlic, minced
- 1 tbsp chopped fresh dill
- Salt to taste
Instructions
- Marinate the chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Chill this mixture for 30 minutes.
- Grill the chicken skewers until they are charred and cooked through, which takes about 10–12 minutes.
- In a bowl, mix the tzatziki ingredients: Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt.
- Serve the skewers over a bed of lettuce alongside chopped cucumbers, tomatoes, and a generous dollop of tzatziki.
Notes
For added flavor, marinate chicken for up to 4 hours. Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Make tzatziki ahead of time to let flavors meld.
