Description

A flavorful and healthy dish featuring ground chicken meatballs served with a refreshing tzatziki sauce.


Ingredients

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1 tbsp olive oil
  • 1 cup Greek yogurt
  • 1/2 cucumber (grated and drained)
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the ground chicken, breadcrumbs, chopped red onion, garlic, oregano, salt, pepper, and egg.
  3. Mix the ingredients until well combined.
  4. Form the mixture into meatballs, about 1-2 inches in diameter.
  5. Place the meatballs on a baking sheet and drizzle them with olive oil.
  6. Bake for 20-25 minutes or until they are cooked through.
  7. To prepare the tzatziki, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt to taste.
  8. Serve the meatballs with tzatziki on the side.

Notes

Leftover meatballs can be stored in an airtight container in the refrigerator for about 3-4 days. You can also freeze them for up to three months.
