- 1 lb ground chicken
- 1/3 cup breadcrumbs (panko or regular)
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 egg
- 1 tbsp olive oil
- 1 cup Greek yogurt
- 1/2 cucumber (grated and drained)
- 1 clove garlic (minced)
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the ground chicken, breadcrumbs, chopped red onion, garlic, oregano, salt, pepper, and egg.
- Mix the ingredients until well combined.
- Form the mixture into meatballs, about 1-2 inches in diameter.
- Place the meatballs on a baking sheet and drizzle them with olive oil.
- Bake for 20-25 minutes or until they are cooked through.
- To prepare the tzatziki, mix together Greek yogurt, grated cucumber, minced garlic, lemon juice, and salt to taste.
- Serve the meatballs with tzatziki on the side.
Notes
Leftover meatballs can be stored in an airtight container in the refrigerator for about 3-4 days. You can also freeze them for up to three months.
