Delicious and healthy Greek chicken meatballs served with a refreshing homemade tzatziki sauce, perfect for dinner or snacks.


Ingredients

  • 1 lb ground chicken
  • 1/3 cup breadcrumbs (panko or regular)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 clove garlic, minced for tzatziki
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, red onion, minced garlic, parsley, salt, and pepper.
  3. Form the mixture into small meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. For the tzatziki, in a separate bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper.
  6. Serve the meatballs warm with tzatziki sauce on the side.

Notes

For a spicier kick, add a dash of cayenne pepper to the meat mixture. Store leftovers in an airtight container in the fridge for up to 3 days.
