- 1 lb boneless, skinless chicken thighs
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tbsp Greek yogurt
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup Greek yogurt (for tzatziki sauce)
- 1/2 cucumber, grated and squeezed to remove excess liquid
- 2 garlic cloves, minced (for tzatziki sauce)
- 1 tbsp olive oil (for tzatziki sauce)
- 1 tbsp lemon juice (for tzatziki sauce)
- 1 tbsp chopped fresh dill
- 4 pita breads
- 1/2 red onion, thinly sliced
- 1 tomato, diced
- 1 cup shredded lettuce
- Feta cheese, crumbled (optional)
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, Greek yogurt, oregano, cumin, paprika, salt, and pepper. Add the chicken thighs and coat thoroughly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Prepare the Tzatziki Sauce: Combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, fresh dill, salt, and pepper in a bowl. Mix well and refrigerate until ready to serve.
- Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-7 minutes per side, until golden brown and fully cooked. Let the chicken rest for 5 minutes before slicing into strips.
- Assemble the Gyros: Warm the pita bread on a dry skillet or directly over a flame. Layer each pita with sliced chicken, tzatziki sauce, red onion, tomato, shredded lettuce, and crumbled feta cheese if desired. Fold the pita into a wrap.
