- 1 lb (450 g) chicken breast or thighs, cut into bite-sized pieces
- 1 cup orzo (or gluten-free orzo/rice for a GF version)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 3 garlic cloves, minced
- 2 cups water or chicken broth
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken pieces and season with paprika and oregano.
- Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the orzo and 2 cups of water (or chicken broth) to the skillet.
- Bring to a boil, then reduce heat and cover.
- Cook for about 10-12 minutes or until the orzo is tender and has absorbed the liquid.
- Serve warm, optionally garnished with fresh herbs.
Notes
For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs. Feel free to add vegetables like spinach or bell peppers.
