Delightful and healthy tarts made with crunchy granola and creamy yogurt, perfect for breakfast or a snack.
Ingredients

- 1 1/2 cups rolled oats
- 1/2 cup shredded coconut
- 2 tbsp chia seeds
- 1/2 tsp cinnamon
- 1/4 cup + 1 tbsp coconut oil
- 1/4 cup honey or maple syrup
- 1 cup natural yogurt or coconut yogurt
- 1 tbsp honey, stevia, or other sweetener (optional)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 180°C (350°F).
- In a large bowl, combine the oats, shredded coconut, chia seeds, and cinnamon.
- In a small saucepan, melt the coconut oil and honey over low heat.
- Pour the melted oil and honey over the oat mixture and stir to coat evenly.
- Spoon the mixture into greased tart tins, pressing firmly to form the crust.
- Bake for around 15 minutes, keeping an eye on them to prevent over-browning.
- Once baked, press the tarts down again to firm up the crust and let them cool completely before removing.
- In a small bowl, mix the yogurt, sweetener (if desired), and vanilla extract. Adjust sweetness to your liking.
- Once the crusts are cooled, fill each tart with the yogurt mixture and top with fresh fruits like berries or bananas.
Notes
Press the crust firmly into the tart tins for structure. Fill the tarts just before serving to prevent the crust from getting soggy.
