- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup sour cream
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs, 1/4 cup sugar, melted butter, and 1 tsp vanilla extract. Stir until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until slightly golden. Let cool.
- In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. Add 1 tsp vanilla extract, then beat in the eggs one at a time. Mix in the sour cream and heavy cream until smooth.
- Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 50-60 minutes until edges are set but the center is slightly jiggly.
- Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then, cool to room temperature, refrigerate for at least 4 hours or overnight.
Notes
Serve plain or with toppings like fresh berries or chocolate sauce. Store leftovers tightly covered in the refrigerator for up to five days.
