- 3 slices sourdough or rustic bread
- 1/2 cup cherry tomatoes, halved
- 1/2 cup mushrooms, sliced
- 2 eggs
- 1 tbsp butter
- 1/4 cup feta cheese, crumbled
- Fresh rosemary (for garnish)
- 1 tbsp chopped parsley
- 1/4 tsp smoked paprika
- Salt & pepper to taste
- Olive oil for sautéing
Instructions
- Lightly oil and toast the bread slices until golden and crisp.
- Sauté the sliced mushrooms in olive oil, adding salt and pepper, until deep brown and tender.
- Scramble the eggs in butter over low heat, adding smoked paprika for flavor.
- Sauté the halved cherry tomatoes until soft.
- Top the toasted bread with sautéed tomatoes, crumbled feta, and fresh rosemary.
- Layer each toast with sautéed mushrooms, scrambled eggs, and the tomato-feta mix. Finally, sprinkle with chopped parsley.
Notes
For best texture, toast bread just before serving. Feel free to customize with different toppings.
