Ingredients

  • 3 slices sourdough or rustic bread
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup mushrooms, sliced
  • 2 eggs
  • 1 tbsp butter
  • 1/4 cup feta cheese, crumbled
  • Fresh rosemary (for garnish)
  • 1 tbsp chopped parsley
  • 1/4 tsp smoked paprika
  • Salt & pepper to taste
  • Olive oil for sautéing

Instructions

  1. Lightly oil and toast the bread slices until golden and crisp.
  2. Sauté the sliced mushrooms in olive oil, adding salt and pepper, until deep brown and tender.
  3. Scramble the eggs in butter over low heat, adding smoked paprika for flavor.
  4. Sauté the halved cherry tomatoes until soft.
  5. Top the toasted bread with sautéed tomatoes, crumbled feta, and fresh rosemary.
  6. Layer each toast with sautéed mushrooms, scrambled eggs, and the tomato-feta mix. Finally, sprinkle with chopped parsley.

Notes

For best texture, toast bread just before serving. Feel free to customize with different toppings.
