  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 1/2 cup sour cream
  • 1/4 cup flour
  • 3 apples, peeled and sliced
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup butter
  • 1/2 cup caramel sauce
  • Whipped cream (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). In a medium bowl, mix together the graham cracker crumbs, melted butter, and sugar. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes. Remove from the oven and let it cool.
  2. In a large bowl, beat together the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, beating well after each addition. Mix in the sour cream and flour until combined. Pour the cheesecake mixture over the cooled crust.
  3. Wrap the bottom of the springform pan in aluminum foil. Place the pan in a larger baking dish and fill the dish with hot water. Bake for 50-60 minutes, until the cheesecake is set but still slightly jiggly. Turn off the oven, crack the door open, and cool the cheesecake in the oven for 1 hour. Chill in the refrigerator for at least 4 hours or overnight.
  4. In a large skillet, melt the butter over medium heat. Add the apples, sugar, cinnamon, and nutmeg. Cook until the apples are tender and caramelized, about 10 minutes. Remove from heat and let cool slightly.
  5. Once the cheesecake is chilled, spoon the caramelized apple mixture over the top. Drizzle with caramel sauce and garnish with whipped cream if desired.

Notes

For a firmer texture, chill overnight. Feel free to add nuts for extra texture.
