Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons powdered sugar
  • Melted chocolate drizzle (optional)
  • Chopped peanuts (optional)
  • Powdered sugar (optional)

Instructions

  1. Make the Peanut Butter Lava Filling: In a small bowl, mix the creamy peanut butter and powdered sugar until smooth. Scoop small balls about the size of a teaspoon and freeze them for 15-20 minutes.
  2. Prepare the Cupcake Batter: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners. In one bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. In another bowl, mix the melted butter, sugar, eggs, and vanilla until smooth. Alternate adding the dry ingredients and buttermilk to the wet mixture, stirring until just combined.
  3. Fill & Bake: Fill each cupcake liner halfway with cupcake batter. Place a frozen peanut butter ball in the center of each cupcake and cover it with more batter until each liner is about 3/4 full. Bake for 16-18 minutes.
  4. Cool & Serve: Let the cupcakes cool in the pan for 5 minutes, then carefully remove them. Optionally drizzle with melted chocolate, sprinkle with chopped peanuts, or dust with powdered sugar.

Notes

For best results, freeze the peanut butter balls well. Serve warm for the ultimate gooey experience.
