- 1 teaspoon baking powder

- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 1/2 cups diced apples (such as Granny Smith)
- 1/2 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, whisk the melted butter and sugar until combined. Add the eggs, one at a time, mixing well after each. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
- Gently fold in the diced apples.
- Divide the batter among the muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 5 minutes, then transfer to a wire rack.
- Drizzle with caramel sauce before serving.
Notes
Use fresh apples for the best flavor. For a fun twist, add chopped nuts or chocolate chips.
