  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups diced apples (such as Granny Smith)
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, whisk the melted butter and sugar until combined. Add the eggs, one at a time, mixing well after each. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  5. Gently fold in the diced apples.
  6. Divide the batter among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan for 5 minutes, then transfer to a wire rack.
  9. Drizzle with caramel sauce before serving.
