Ingredients
– 1 ½ cups gluten-free all-purpose flour
– 1 tsp xanthan gum (if not included in flour blend)
– 1 tsp salt
– 1 cup unsalted butter (cold and cubed)
– 6–8 tbsp ice water
Instructions
1. In a large bowl, whisk together the gluten-free flour, xanthan gum, and salt.
2. Cut in the cold butter until the mixture resembles coarse crumbs.
3. Gradually add ice water, one tablespoon at a time, mixing just until a dough forms.
4. Shape the dough into a rectangle, wrap it in plastic, and chill for 30 minutes.
5. On a lightly floured surface, roll the dough into a long rectangle.
6. Fold it like a letter into thirds, rotate, and roll again. Repeat this fold-and-roll process 4 times, chilling for 15 minutes if the butter softens.
7. After the final fold, wrap the dough and chill for 20 minutes before using.
8. Bake at 400°F (200°C) for 20–25 minutes or until golden and flaky.
