Instructions

  1. In a mixing bowl, combine almond flour, rice flour, tapioca starch, xanthan gum, and salt.
  2. Add cold butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  4. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  5. Roll out the dough between parchment paper to avoid sticking, then use it for your desired pastry.
