A delightful gluten-free dessert combining rich chocolate and refreshing mint flavors, perfect for any occasion.


Ingredients

  • 2 cups gluten-free chocolate cookies (such as gluten-free Oreos)
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon peppermint extract
  • 1/2 cup mini chocolate chips (gluten-free)
  • 1/2 cup dark chocolate chips (gluten-free)
  • 1 tablespoon coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crush the gluten-free chocolate cookies into fine crumbs and mix with the melted butter until well combined. Press the mixture firmly into the bottom of a 9×13 inch baking dish to form a crust. Bake for about 10 minutes, then remove from the oven and allow to cool completely.
  3. In a mixing bowl, beat the heavy cream until soft peaks form.
  4. In another bowl, combine the softened cream cheese, powdered sugar, and peppermint extract. Beat until smooth.
  5. Gently fold the whipped cream into the cream cheese mixture until well combined. Stir in the mini chocolate chips.
  6. Spread half of the mint cream filling over the cooled cookie crust.
  7. Place another layer of crushed gluten-free cookies on top of the filling.
  8. Spread the remaining mint cream filling over the cookies.
  9. Finish with a final layer of crushed cookies on top.
  10. In a small saucepan or microwave-safe bowl, melt the dark chocolate chips with coconut oil until smooth. Stir until fully combined. Drizzle the melted chocolate over the top of the cake.
  11. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to set.
  12. Cut into squares and serve chilled.

Notes

Ensure ingredients are labeled gluten-free for best results. Adjust peppermint extract for stronger flavor if desired.
