Ingredients

  • 1 whole chicken (4 to 5 pounds)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 cup cranberry juice
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 tbsp Dijon mustard
  • 1/2 cup fresh cranberries
  • Orange slices for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the chicken.
  3. Place the chicken in a roasting pan.
  4. In a separate bowl, combine cranberry juice, orange juice, honey, and Dijon mustard.
  5. Pour the juice mixture over the chicken and add fresh cranberries around it.
  6. Roast in the preheated oven for about 90 minutes, basting occasionally with the juices, until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  7. Let it rest for 10 minutes before carving. Garnish with orange slices before serving.

Notes

For a thicker glaze, simmer the juice mixture before applying. Baste the chicken several times during roasting for added moisture.
