- 1 whole chicken (4 to 5 pounds)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 cup cranberry juice
- 1/2 cup orange juice
- 1/4 cup honey
- 1 tbsp Dijon mustard
- 1/2 cup fresh cranberries
- Orange slices for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the chicken.
- Place the chicken in a roasting pan.
- In a separate bowl, combine cranberry juice, orange juice, honey, and Dijon mustard.
- Pour the juice mixture over the chicken and add fresh cranberries around it.
- Roast in the preheated oven for about 90 minutes, basting occasionally with the juices, until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Let it rest for 10 minutes before carving. Garnish with orange slices before serving.
Notes
For a thicker glaze, simmer the juice mixture before applying. Baste the chicken several times during roasting for added moisture.
