Instructions
- Preheat your oven to 375°F (190°C).
- In a small saucepan over medium heat, combine cranberries, orange juice, orange zest, honey, balsamic vinegar, minced garlic, cinnamon, and nutmeg. Let it simmer for about 10-12 minutes, stirring occasionally until the cranberries burst and the mixture thickens.
- Season both sides of the chicken breasts with salt and pepper.
- In a large, oven-safe skillet, heat olive oil over medium-high heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Pour the cranberry-orange sauce over the chicken. Transfer the skillet to the oven and roast for 20-25 minutes or until the chicken is cooked through and the sauce is bubbly and caramelized.
- Garnish with fresh rosemary sprigs, if desired, and serve warm.
