Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 cup molasses
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup mascarpone cheese
  • Zest and juice of 1 orange
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, and spices.
  3. In another large bowl, cream the softened butter with both sugars until light and fluffy. Add the eggs one by one and mix well.
  4. Stir in the molasses and buttermilk, then gradually add the dry ingredients to the wet mixture.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool completely in the pan.
  8. In a separate bowl, combine the mascarpone cheese, orange zest, and juice. Mix until smooth and creamy.
  9. Once the cake is cool, spread the mascarpone mixture on top evenly.
  10. Dust with powdered sugar before serving.

Notes

Serve warm or at room temperature; great with a scoop of vanilla ice cream.
