- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 3 large eggs
- 1 cup molasses
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup mascarpone cheese
- Zest and juice of 1 orange
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
- In a bowl, whisk together the flour, baking soda, baking powder, and spices.
- In another large bowl, cream the softened butter with both sugars until light and fluffy. Add the eggs one by one and mix well.
- Stir in the molasses and buttermilk, then gradually add the dry ingredients to the wet mixture.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan.
- In a separate bowl, combine the mascarpone cheese, orange zest, and juice. Mix until smooth and creamy.
- Once the cake is cool, spread the mascarpone mixture on top evenly.
- Dust with powdered sugar before serving.
Notes
Serve warm or at room temperature; great with a scoop of vanilla ice cream.
