Description
A delightful dessert combining tangy blackberries and apples with a smooth cheesecake filling, topped with a crunchy crumble, enhanced by the addition of gin.

- 200g blackberries
- 100ml gin (or sloe gin)
- 2 tbsp sugar
- 500g cooking apples (like Braeburn), peeled, cored, and diced
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp vanilla extract
- 50g light brown sugar
- 2 tbsp cornstarch
- 50ml water
- 200g light brown sugar
- 220g plain flour
- 1 tsp baking powder
- 100g porridge oats
- 200g slightly salted butter, melted
- Flaked almonds, for topping
- 250g cream cheese, softened
- 25g icing sugar
- 1 egg
- 1 tbsp lemon juice
Instructions
- Toss blackberries with gin and sugar in a container and let them soak for a few hours, then strain.
- Preheat oven to 200°C (390°F). Line a 20cm square baking tin with parchment paper. Combine diced apples, water, cinnamon, nutmeg, vanilla, and brown sugar in a saucepan. Simmer for 5 minutes. Mix cornstarch with water, add to apples, stir in leftover gin, and simmer for another 5 minutes.
- Mix brown sugar, flour, baking powder, oats, and melted butter in a bowl until sandy crumbs form. Reserve 1/3 for topping and press the remaining 2/3 into the prepared baking tin.
- Beat cream cheese with icing sugar, egg, vanilla, and lemon juice until smooth. Spread over the crumble base.
- Scatter soaked blackberries over the cream cheese layer, then layer the cooked apples on top. Sprinkle with reserved crumble and flaked almonds.
- Bake for 20 minutes, add flaked almonds, and bake for an additional 10 minutes until golden. Cool for 1 hour and refrigerate before slicing.
Notes
Let the blackberries soak sufficiently to absorb the gin flavors. For a rich flavor, use flavored liqueurs instead of gin. Chill the slice before cutting for easier slicing.
