Delightful German chocolate cupcakes with rich chocolate cake and sweet coconut-pecan frosting, perfect for any occasion.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1/2 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter (for frosting)
  • 1 cup packed brown sugar (for frosting)
  • 1/4 cup milk (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Additional chopped pecans for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, buttermilk, vegetable oil, and vanilla extract. Beat on medium speed until well combined.
  4. Stir in the boiling water until the batter becomes smooth.
  5. Fold in the shredded coconut and chopped pecans.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  8. Let them cool completely before frosting.
  9. To make the caramel frosting: In a saucepan over medium heat, melt the butter.
  10. Add the brown sugar and milk, stirring constantly. Bring the mixture to a boil and let it boil for 2 minutes.
  11. Remove from heat and let cool for 5 minutes, then stir in the powdered sugar and vanilla extract until smooth.
  12. Frost the cooled cupcakes with the caramel frosting and top with additional chopped pecans if desired.

Ensure all ingredients are at room temperature for best results. Store leftovers in an airtight container at room temperature for up to 3 days.
