  • 2 cups sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 4 large egg yolks
  • 1 cup evaporated milk
  • ½ cup butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until smooth.
  4. Stir in boiling water until combined.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. In a saucepan, combine egg yolks, evaporated milk, butter, and sugar. Cook over medium heat until thickened.
  7. Remove from heat and stir in coconut and pecans.
  8. Once the cakes are cooled, frost the top of one layer with the coconut-pecan frosting, and place the other layer on top, frosting the top and sides.

Notes

For the best flavor, let the cake sit for a few hours before serving to allow the frosting to set.
