- 1 ¾ cups all-purpose flour
- 2 cups sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup shredded coconut
- 1 cup chopped pecans
- 4 large egg yolks
- 1 cup evaporated milk
- ½ cup butter
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until smooth.
- Stir in boiling water until combined.
- Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean.
- In a saucepan, combine egg yolks, evaporated milk, butter, and sugar. Cook over medium heat until thickened.
- Remove from heat and stir in coconut and pecans.
- Once the cakes are cooled, frost the top of one layer with the coconut-pecan frosting, and place the other layer on top, frosting the top and sides.
Notes
For the best flavor, let the cake sit for a few hours before serving to allow the frosting to set.
