- 1 Japanese sweet potato, baked
- 1/2 lb shrimp, peeled and deveined
- 1 tbsp olive oil (for shrimp)
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt & black pepper to taste
- 1 cup green beans, trimmed
- 1 tsp olive oil (for green beans)
- 1/4 tsp sea salt or garlic salt
Instructions
- Preheat the oven to 400°F. Bake the sweet potato for 45-50 minutes until tender.
- Toss green beans in olive oil and sea salt. Sear in a hot pan for 5-7 minutes until charred.
- Heat olive oil in a skillet, add shrimp, and season with garlic powder, paprika, salt, and pepper. Cook for 2-3 minutes per side.
- Split the sweet potato and sprinkle with flaky sea salt.
- Layer sweet potato, shrimp, and green beans in a bowl.
Notes
For extra flavor, consider adding lemon juice or zest when serving. Ensure shrimp are thawed and patted dry for better searing.
