Ingredients

- 3 medium potatoes, cubed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan
- 1/2 teaspoon dried herbs
- Salt and pepper to taste
Instructions
- Toss potatoes with all ingredients in a large bowl until evenly coated.
- Spread the potatoes on a baking sheet.
- Roast at 200°C (about 400°F) for 30–35 minutes, flipping halfway through, until golden brown and crispy.
Notes
Store leftover potatoes in an airtight container in the fridge for up to 3 days. Reheat in the oven at 180°C (350°F).
