Ingredients

  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 1 egg
  • 3 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, minced garlic, chopped parsley, Italian seasoning, salt, and pepper. Stir until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan. Top it with extra mozzarella cheese and a sprinkle of Parmesan.
  4. Bake for 35–40 minutes, until the internal temperature reaches 165°F (74°C). To achieve a golden cheesy crust, broil for an additional 2–3 minutes.
  5. Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve warm.

Notes

For best results, avoid overmixing to keep the meatloaf tender. Experiment with different cheeses or herbs based on your preference.
