Ingredients

- 1.5 lbs boneless skinless chicken breast or thighs, cut into bite-size pieces
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 8 oz mushrooms, sliced
- 2 cups mashed potatoes
- 2 tablespoons butter (for mashed potatoes)
- 1/4 cup milk (for mashed potatoes)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with salt, pepper, garlic powder, and paprika. Add them to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add the sliced mushrooms to the skillet and cook until they are tender, about 3-4 minutes.
- For the mashed potatoes, boil peeled and chopped potatoes in salted water until tender. Drain and mash the potatoes with butter and milk until smooth.
- Serve the garlic mushroom chicken bites over the mashed potatoes.
Notes
Garnish with fresh parsley for extra color. This dish pairs well with a side of steamed vegetables or a simple salad.
