- 2 bone-in, skin-on chicken thighs
- 2–3 medium Yukon gold potatoes, quartered
- 3 large carrots, peeled and halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp Italian seasoning
- Salt & pepper to taste
- Optional: fresh thyme or rosemary
Instructions
- Pat the chicken thighs dry and season them with garlic powder, Italian seasoning, salt, and pepper.
- Toss the potatoes and carrots in olive oil, salt, pepper, and onion powder. Spread them on a baking sheet.
- Place the chicken thighs on the same tray, skin-side up, and roast at 425°F (220°C) for about 35–40 minutes.
- Optional: Broil for 2–3 minutes for extra crispiness.
- Serve hot, drizzled with pan juices and garnished with fresh herbs if desired.
Notes
To ensure crispiness, make sure the chicken thighs are dry before seasoning. Check the internal temperature of the chicken to reach 165°F (75°C).
