- 4 lamb rib chops
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp butter (for basting)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 onion, chopped
- 1 tbsp olive oil (for veggies)
- Pinch of Italian seasoning
- 1 cup cooked white rice
- 1 tbsp butter (for rice)
- 1 tsp dried parsley
- 1/2 tsp garlic powder (for rice)
- Salt to taste
Instructions
- Rub the lamb chops with olive oil, garlic powder, rosemary, smoked paprika, salt, and pepper. Heat a skillet and sear the lamb for 3-4 minutes on each side, basting with butter to keep it juicy.
- In another skillet, heat olive oil and add the sliced peppers and chopped onion. Cook until they are soft and slightly charred.
- In a bowl, mix warm cooked rice with butter, garlic powder, dried parsley, and salt until well combined.
- Place two lamb chops next to a scoop of the herb rice and sautéed veggies on each plate.
- Serve immediately while hot.
Notes
For extra flavor, consider marinating the lamb chops a few hours before cooking. Using fresh herbs can enhance the taste significantly.
