  • 1/2 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp butter (for basting)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 onion, chopped
  • 1 tbsp olive oil (for veggies)
  • Pinch of Italian seasoning
  • 1 cup cooked white rice
  • 1 tbsp butter (for rice)
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder (for rice)
  • Salt to taste

Instructions

  1. Rub the lamb chops with olive oil, garlic powder, rosemary, smoked paprika, salt, and pepper. Heat a skillet and sear the lamb for 3-4 minutes on each side, basting with butter to keep it juicy.
  2. In another skillet, heat olive oil and add the sliced peppers and chopped onion. Cook until they are soft and slightly charred.
  3. In a bowl, mix warm cooked rice with butter, garlic powder, dried parsley, and salt until well combined.
  4. Place two lamb chops next to a scoop of the herb rice and sautéed veggies on each plate.
  5. Serve immediately while hot.

Notes

For extra flavor, consider marinating the lamb chops a few hours before cooking. Using fresh herbs can enhance the taste significantly.
