- 4 chicken breasts
- 2 cups green beans
- 2 cups carrots, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Add chicken breasts to the bowl and coat them well with the mixture.
- Arrange the chicken on a baking sheet.
- In the same bowl, toss the green beans and carrots with any remaining herb mixture, then place them around the chicken.
- Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
- Serve warm.
Notes
For added flavor, fully coat the chicken in the herb mixture. You can switch out vegetables as desired, and consider adding red pepper flakes for spice.
