Description

Ingredients

  • 4 chicken breasts
  • 2 cups green beans
  • 2 cups carrots, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Add chicken breasts to the bowl and coat them well with the mixture.
  4. Arrange the chicken on a baking sheet.
  5. In the same bowl, toss the green beans and carrots with any remaining herb mixture, then place them around the chicken.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Serve warm.

Notes

For added flavor, fully coat the chicken in the herb mixture. You can switch out vegetables as desired, and consider adding red pepper flakes for spice.
