A delicious and healthy one-pan meal featuring juicy chicken, sweet potatoes, and fresh asparagus, perfect for dinner.
Ingredients

- 1 medium sweet potato
- 1 chicken breast (or 3–4 tenderloins)
- 1 cup fresh asparagus spears
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning or chopped parsley
- Salt & black pepper to taste
- Optional: butter or cinnamon for sweet potato
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potato, then toss with olive oil, salt, and cinnamon (if using). Spread on a baking sheet.
- Season the chicken breast with garlic powder, Italian seasoning, salt, and black pepper.
- Place the seasoned chicken on the baking sheet with the sweet potatoes.
- Roast in the oven for about 20 minutes.
- Add asparagus spears to the baking sheet, toss with olive oil, salt, and pepper, and roast for another 10-15 minutes until everything is cooked through.
- Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
