Description

A delicious and healthy one-pan meal featuring juicy chicken, sweet potatoes, and fresh asparagus, perfect for dinner.


Ingredients

  • 1 medium sweet potato
  • 1 chicken breast (or 34 tenderloins)
  • 1 cup fresh asparagus spears
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or chopped parsley
  • Salt & black pepper to taste
  • Optional: butter or cinnamon for sweet potato

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potato, then toss with olive oil, salt, and cinnamon (if using). Spread on a baking sheet.
  3. Season the chicken breast with garlic powder, Italian seasoning, salt, and black pepper.
  4. Place the seasoned chicken on the baking sheet with the sweet potatoes.
  5. Roast in the oven for about 20 minutes.
  6. Add asparagus spears to the baking sheet, toss with olive oil, salt, and pepper, and roast for another 10-15 minutes until everything is cooked through.
  7. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
